Incredible cuvée from 35-year-old Chardonnay vines, vinified for 11 months in a concrete egg tank and 6 more months in a stainless steel tank on the lees. Fermented using indigenous yeasts. Minimal additive, only 25mg/l sulfites. No fining, no filtering.
