If 2007 Chablis is as aggressive as it is classic, Vincent Dauvissat's 1er Séchet is as strict as it gets (in a good way).
This is a Chablis for the purists among purists.
Rockhounds, polish your glasses and your palates because if there is an 07 Chablis with a more razor-sharp edge, we'd very much like to know about it. This bottle wails a textbook definition of the region and screams validation of Vincent Dauvissat's place as one of the region's best (if there was any doubt).
Dauvissat's 2007 1er Cru Séchet is absolutely, stunningly, jammed with raw, cut rocks and enough ice-pick acidity to keep you on the edge of your seat. Dancing right in step with all that zip and all those stones is a surprising juicy-ripeness.
Meadows quote is very apt: "ripe, round and exceptionally pure flavors that are at once delicious, detailed and wonderfully intense."
Today we offer this bottle at a price nearly as sharp as the wine itself - but, more than that, we offer it as one of the under-the-radar values in the Dauvissat stable. The Séchet boasts considerably more class, finesse and MINERALITY than the regular Chablis. Though the Séchet parcel is little-known, the vineyard in which it sits has a more formidable reputation: Vaillons. Indeed, Dauvissat could very well label the Séchet as Vaillons, but there's obviously something distinctive about this sub-parcel that keeps him distinguishing the wine from its bigger brother.
Think of this as another indication of Dauvissat's attention to detail - something that shows up again and again in the wines he crafts.
This attention to detail is, in fact, a critical factor in why Dauvissat has been a name - one of the names - in Chablis for some time now. Dauvissat is rigorous in the vineyard; hand-harvests are standard with vines that average over 40 years old. The key though, is that Dauvissat is patient but not ostentatious when it comes to picking late, thereby achieving perfectly (not overly) ripe grapes that are massively concentrated with impressive length. Like a true Chablisiene, he explains, "Long élevage helps tone down the Chardonnay-ness of the wine, and emphasize its minerality."
This is a bottle that speaks to us - clearly and with... well, extraordinary precision. For you fiends of driving austerity and true nervosité held up by gads of minerality, the 2007s are pure masochism, and the 07 "Séchet" speaks the with an uncommon clarity, a razor sharpened even finer by the vintage and one of the region's masters.
