There's not much we can say that we haven't already said about Raveneau.
If you're reading this then you are a fan of Chablis and if you are a fan of Chablis than you really should experience a Raveneau, at least once. You are unlikely to ever find a Raveneau that's this affordable, so if you're game for a spin, this is your bottle.
This is the first-ever AC Chablis from Raveneau, a "world premier" of sorts and it's from the spectacular 2007 vintage and today we can go as low as $56.98 a bottle. Our stock is not destined to last long.

The cruelly perfect 2007 vintage in Chablis styled wines with rigor, with a chiseled structure, with muscular acids and profound minerals. Make no mistake, this is a vintage for purists and Raveneau's "simple" AC Chablis is anything but simple. There is more depth here than in most 1er Crus, with Raveneau's signature bass-laden seashell and gunflint.
The plot of land from which Raveneau sourced these grapes is quite close to the 1er Cru Montmains, which is one of the trio of great 1ers that face the Grand Crus. Here, Raveneau’s careful tending of the vines is exactly the same as that given to the $400+ Les Clos, the Valmur or the MDT - yields are reduced severely, only perfectly ripened fruit is picked, extreme care is taken in their transportation, and the wine shows off an authenticity that’s at all times true to Chablis; true to Raveneau.
What’s different about this bottling is that there’s a certain light-hearted ease to drinking this wine - a youthful, racy and light-footed snap that’s especially enjoyable now. If anything, the majority of Raveneaus seem to be opened entirely too early… these typically need decades to fully strut their entire spectrum of fruit, minerals, tension and breadth, but the 07 Chablis is already showing off its elegance, its white-flower-infused, briny eau de parfum with a buoyancy that makes it very compelling to drink.
Should you wish to cellar this for a couple of years, it will have no problem powering through a few more summers like the one we’re in the midst of. But we only have a single parcel of this “premiere” bottling, and we expect it will be gone quickly.
