When I chose my Wine of the Year in December, I practically wrote a whole thesis on why I love Chablis and why I'm especially obsessed with Dauvissat's 08s.
These are simply the purest expressions of Chardonnay in existence.
That email sold out VERY quickly.
So today we bring to the table yet one final rock star of the 2008 Dauvissat stable - and this one comes in at under $35.
This is one of those offers where the price itself is both the biggest selling point and the biggest distraction. This is a serious Chablis, a wine that is crafted in the same manner as all of Dauvissat's other wines - you know the story: rigorous vineyard work, hand-harvesting, a careful élevage .
The Burghound's review is glowing; he ends with the simple declaration: "This is an outstanding villages." In earnest, this puts many 1er Crus to shame.
If it is simpler than many of Dauvissat's 1er Cru bottlings, there's something about this simplicity that makes it even more inviting. For purists, this is a downright shocking bottle of wine. It is studded with minerals, sea breezes and sea shells. It is chiseled. It is structured; this will develop beautifully in the cellar for 5+ years, easily (so have no worries waiting until the temperature comes above -34° to drink.)
If you've been reading any of our emails, or following the Chablis scene at all, you know that Dauvissat is at the very front of the pack in Chablis. While his wines remain more affordable than Raveneau, you should still expect to pay well over $100 for his Clos or Preuses (and it's worth it).
Yet for everyone who hasn’t had the chance to try a Dauvissat (as well as, clearly, everyone who has and who knows), this is a good place to start. This bottle is the "everyday Dauvissat" (which sounds oxymoronic) - the kind of bottle you can open and be blown away by on a casual night in with a good friend and a simple roast fish.
And yet, this being Dauvissat and all, it packs more than enough class to impress the most fiendish Chablis geeks. This is a bottle that displays all the beautiful ruthlessness of the vintage.
As I also wrote in my "Wine of the Year" email, I believe that as more people catch on to the incredible things going on in Chablis, the unique expression of these old, limestone-based and seashell-jammed soils, these will move into their rightful places on the mantle alongside the most famous white Burgundies - the Montrachets and the Corton-Charlemagnes.
The pricing, obviously, cannot help but move in the same direction.
