We first introduced the rising Champagne star Cedric Bouchard in April of this year, in the wake of Antonio Galloni's stunning reviews. Antonio lavished Bouchard's singular Champagnes with the kind of weighty verbiage (and incredibly high scores) usually reserved for the elite houses of Champagne.
Cedric's humble one-man operation, with barely enough vineyard holdings to make five hundred cases, was suddenly in the company of Krug and the most admired and influential small producer in Champagne, Jacques Selosse.
As you'd expect with such an explosive entrance into the Champagne world, two things happened. First, heated discussions began in smart wine stores all over the country and on nearly every important wine bulletin board. Second, we sold out of our small parcel almost instantly.
The latest parcel is due to arrive in early November and we are once again able to feature the stunning value in Cedric's minuscule portfolio, the Val Vilaine. At only $52.95, this is the lowest price you are likely to see anywhere. This time, however, we have also received an extremely limited amount (we are talking bottles here) of his even rarer, top cuvées to explore, including a few magnums and Cedric's 100% Pinot Blanc cuvée, the Boloree. Bouchard's Champagnes are wines of incredibly fine detail, even when they are forceful or even plush. As Antonio Galloni recommends, we urge you to drink these Champagnes in white wine glasses rather then the more traditional flutes so the aromatics can really strut their stuff.
Cedric Bouchard does things differently. From the vineyard to the cellar, the focus is on the terroir. Bouchard is well beyond most in his almost relentless pursuit of simplicity: Single vineyard parcels, single vintages (even though they are labeled as NV), single varieties. The Val Vilaine is 100% Pinot Noir sourced from a tiny vineyard (~1.5 hectares) still owned by Cedric's father. The site is farmed organically; yields are kept low by any viticultural standard, absurdly low by Champagne's normal standards. The Val Vilaine, as with all of Bouchard's wines, is fermented using only native yeast in stainless steal tanks. It is bottled unfined and unfiltered with no added dosage.
Even if the initial uproar from Galloni's reviews has settled, we still receive calls and emails almost daily asking about these rare sparklers. This parcel is likely to sell out as quick, if not quicker, than the last.

100% Pinot Noir, sourced from a small 1.5 hectare vineyard owned by Cedric's father. This is an incredible value for the seriousness of the bottling; the 2006, writes Galloni, was made from yields as ludicrously low as 26 hectoliters per hectare. Very floral and mineral, with an airy fullness to the wine that is both expansive and detailed. This is the "go to" sparkler for the Cedric Bouchard experience.
