Champagne: Bouchard, Brochet, Ulysse Collin, Dom Pérignon,
Egly-Ouriet, Pierre Peters, Savart, Taittinger & More

I tried to keep this list relatively concise. There are just over two dozen wines on offer.

It covers a lot of ground, including magnums of 1995 Krug and wines from small grower Paul Gosset. 

I should call out the champagnes of Gaspard Brochet. He was a graphic designer before returning to his family's domaine. The family gave him a few hectares in 2017, and he started making champagne in a garage before recently moving into his own winery. The domaine focuses on impeccable biodynamic vineyard work, picking at high ripeness, and barrel aging. The results are extraordinary and captivating.

Also included in the list below are Pierre Peters Chétillons and Montjolys. Montjolys can be viewed as a bookend to Chétillons. Montjolys is on the same slope as Chétillons but is an entirely different expression. Whereas Chétillons' very chalky soils produce champagnes of high-tension acidity and piercing minerality, Montjolys has more clay, and its wines are looser knit and more expansive.
