By now, you know the deal. I went through our champagne inventory and picked out a long list of favorites.

You'll find everything from the brilliant grower Dhondt-Grellet to Krug's legendary 2008 Clos du Mesnil.
There is little doubt that Ulysse Collin is making some of the greatest expressions of Champagne. I included two bookends of his lineup: The Pierrières with its precision, penetrating minerality, and lifted elegance, and the Maillons with its power and multi-dimensional complexity that seems to hit you from every angle.
I should mention Elise Bougy's meticulously crafted champagnes. They may largely cruise under the radar, but for people who know them, they are wines to aggressively seek out. Le Mont Chainqueux Blanc De Noirs comes from the Montagne and is a blend of Pinot Noir and Pinot Meunier that was planted in 1965.
