It wouldn't be out of line to say that Pierre-Yves Colin's work in St. Aubin has been crucial in establishing the domaine's cult status.
This speaks volumes about how impressive his work is in St. Aubin. Colin has holdings in Grand Crus and top 1er Crus yet savvy buyers hunt the En Remilly bottlings down with the same fervor as the Chevalier-Montrachet.
Seasoned Burgundy fanatics have long sought out En Remilly for its steeliness and soaring finesse. Colin-Morey's wines from En Remilly are stunning. They serve as exemplars of Colin-Morey's incredible ability to render the Chardonnay grape with such purity and riveting intensity.
Collin-Morey's 2021s are radiant, supremely balanced, and laser-focused. In 2021, the Nicholas et Mathis is incredibly exciting. You get a tension-filled and finely etched structure with soaring floral and citrus notes and a backbone of stony minerality.
Colin-Morey makes two bottlings from En Remilly. Nicholas et Mathis is the rarer of the two bottlings. It's situated near the Grand Cru site of Chevalier-Montrachet. Compared to Colin-Morey's basic En Remilly, Nicholas et Mathis is deeper and more textural.
I'm going to wrap this up. Every time that we've offered the En Remilly Nicholas et Mathis we've been hit by a nearly overwhelming flood of orders. Please give us your ideal order and we'll try our best.
