We don’t need many more words than this one for today's offer, but forgive us if we indulge ourselves with a few, just because we can't help but say more about the graceful, ultra-refined 2007 Dauvissat Les Preuses.
Dauvissat's Les Preuses is one of the undeniable great wines of Chablis. Along with Raveneau's Valmur and both producers' Les Clos, Dauvissat's Preuses is always on the must-have lists of top collectors.
I should start out by saying that this wine is extremely limited. There are only two other listings for Dauvissat's '07 Les Preuses in the entire country.
The 2007 vintage in Chablis is unsurpassed in its precision and pure expression of terroir. Dauvissat himself, not one to exaggerate, called 2007 a "miraculous and completely unexpected vintage."
John Gilman labels the vintage "superb" and is especially bullish on Dauvissat's Preuses. For him, the '07 Preuses has "the potential to be counted amongst the one or two greatest vintages of this great wine in the history of the domaine." These are very big words.
Le Clos is generally the most lauded of Dauvissat's wines, and its accolades are not undeserved. But Les Preuses' precision and subtle sophistication puts it on par with the best. If Les Clos is all muscle and force, Les Preuses will beguile with its finesse; Les Preuses is the insider’s Grand Cru. A wine of supreme length and clarity, it is a fine-tuned expression of Chablis.
The wine is bursting with mineral energy, but it is the refined lift of a dancer the bottle exudes that makes it undeniably world-class. Burghound summed it up as simply stunning, but couldn’t keep from also declaring it "a genuinely great wine that is a study in harmony and grace as well as one that should age effortlessly for many years."
As I mentioned before, we are one of only three stores in the nation to offer '07 Les Preuses. People don't sleep on wines this good. We only have an extremely limited quantity, but we're happy to have any at all.

Burghound: "Initially this is still restrained but after only 10 minutes or so it becomes quite expressive with a nose that is airy, ripe, elegant and strikingly pure as it combines plenty of Chablis character that includes sea breeze, citrus and green fruit aromas that precede the delineated and equally pure flavors of stunning depth and intensity, all wrapped in a hugely long finish. Like the nose, the minerality seems subdued at first yet arrives in a real rush on the finale. A genuinely great wine that is a study in harmony and grace as well as one that should age effortlessly for many years.
