The 2018 shows Paiagallo in prime form. The aromatics are explosive and incredibly precise. In many ways, this is the Platonic ideal of Barolo. There are notes of roses, spice, tar, and earth wrapped around a core that's both stern and finessed.
Canonica’s methods respect many of Piedmont's traditional practices and strive for as clear an expression of Nebbiolo as possible: minimal sulfur, foot-pressed grapes, indigenous yeasts, and aging in old oak botti. Even the labels are applied by hand. All of this results in one of the most authentic and compelling wines in all of Piedmont.
