What is a Kabinett, really? Weiser-Künstler presents the ultimate masterclass.

A Kabinett, whether dry or off-dry, is all about an ethereal, almost unbelievable, lightness.

Today we present two of the greatest Kabinetts from 2025 - one razor-sharp, salty, and dry (the Gaispfad), the other citric, stone-fruited, and balanced with a touch of residual sugar (the Ellergrub).

Both are pure energy. That is what makes a Kabinett a Kabinett - not the sugar.

Konstantin Weiser and Alexandra Künstler - who celebrate their 20th vintage with these astounding 2025ers - are among the greatest practitioners of the Kabinett.

They farm some of the steepest sites in the Mosel; they tend some of the oldest, ungrafted vines in the Mosel. The Ellergrub is filled with vines that are 100 years old and older; the average age in the Gaispfad is a youthful 80.

For the true Kabinett, one of the greatest forms in the world of German wine, such old vines are critical. These vines focus on phenolic ripeness and not sugar ripeness. Thus, the grapes and wines they help shape have a profound concentration, yet very little alcohol.

It's magic.

Mosel Fine Wines: "The 2025er Trabener Gaispfad Riesling Kabinett Trocken was made from very old vines in the upper part from the vineyard and was fermented and matured in Fuder down to bone-dry levels of residual sugar. It offers a very delicate and superbly elegant nose of whipped almond cream, vineyard peach, herbal tea, pear, bergamot, jasmine, and may tree. The wine proves delicate and finely creamy on the palate and leaves a light and pure straight touch in the very long and focused finish. There is still a touch of tartness in need of integration, which will happen in a few years."

2025 Ellergrub Kabinett
Mosel Fine Wines: "The 2025er Enkircher Ellergrub Riesling Kabinett was made from fruit harvested on largely un-grafted vines still trained on single pole and was fermented down to fruity-styled levels of residual sugar. It delivers a very classy and superbly complex nose of bergamot, aniseed, fine spices, minty herbs, violet, cassis, and spearmint. The wine has great creamy and fruity presence on the palate and shows clean and fresh elements right into the very long and delicately creamy finish. The aftertaste is superbly fresh and pure. What a splendid, slightly richer Kabinett, which mixes complexity and lightness."
