Laval's Champagnes are simply that singular and captivating. What's so thrilling about Laval is how he combines so much intensity with purity and poise. There's shocking depth and harmony to these kaleidoscopic Champagnes.
Today, I'm happy to offer Laval's 2021 Brut Nature Les Hautes-Chèvres.
Galloni's note above makes clear that 2021 is a special edition of the wine. Sadly, it was a painfully short vintage - yields were 20% of normal.
Les Hautes-Chèvres is sourced from choice mid-slope and upper-slope parcels in the village of Cumières. For the first time, the 2021 Les Hautes-Chèvres is a blend of Chardonnay, Pinot Noir, and Pinot Meunier that were co-fermented.
This bottling is notorious for its transparency and nuance. The 2021 doesn't disappoint in this regard. It's concentrated, packed with nuance, and has tension-filled verve. It's a Champagne that seems to hit the palate from nearly every angle. There's a saline-inflected minerality, herbs, spice, orchard fruits, and dried flowers.
Laval's Les Hautes-Chèvres deserves a place next to the personality-filled bottles of Prévost and Ulysse Collin. As you can imagine, quantities are extremely limited. We suggest that you get your orders in early.
