Savart is a former professional soccer player, and even though he comes from a winemaking family, he didn't drink until he was nineteen years old. Once focused on wine, he approached it with a rare seriousness and curiosity. In Champagne, he's famous for how sharp his palate is and for the breadth of his knowledge of the wines of the world.
The Champagnes serve as great examples of an incredibly conscientious producer turning out Champagnes that never fail to deeply impress.
Out of the lineup, the Bulle De Rosé is the most joyful while maintaining Savart's signature rigor. It offers up floral notes, snappy red fruits, and attractive grace and finesse.
The Bulle De Rosé is mostly Pinot Noir (usually around 80%) with a small percentage of still red wine added, and it's fermented in a combination of stainless tanks and barrel. The overall result is incisive and beautifully expressive.
I'm very fond of how the wine combines such enjoyment and interest. It's a real testament to Savart's skill to pull this off. I'd suggest that you stock up now because this wine has a way of disappearing quickly.
