Lovers of Dauvissat, of mineral, racy Chablis, of honest winemaking—there's someone you should meet.

Stephane Moreau is the winemaker behind this family operation which has been making wine since the 17th century. He's a young gun in Chablis, but he's already proving to be one of the most talented winemakers in the region.

His are deeply mineral wines, but with a rich expressiveness of character; rarely do these poles go so effortlessly hand in hand.

By way of introduction, we're offering his 2012 Premier Cru Vaillons.

Moreau takes inspiration from the disciplined elegance of Vincent Dauvissat, and this stylistic kinship is clear. The feeling is mutual: the master himself recognizes serious talent here.

The wine also finds a fan in Allen Meadows, who unequivocally declared Moreau "one of the most exciting young growers in Chablis." And Meadows is willing to bet that others will agree: "that he possesses a gifted touch is evident to anyone who has had the pleasure of tasting his wines."

The 2012 Vaillons is a perfect introduction to Moreau. It is purely, unabashedly Chablis, deeply mineral and evocative of the Kimmeridgean soils.

There is supreme harmony to the 2012 vintage, with rounded ripeness matched to dazzling acidity—and Moreau's wines live up to that.

This is old-school winemaking in a thoroughly modern expression. Biodyamics, hand-harvesting, ancient oak—old ideas, sure, but Moreau is infusing time-honored traditions with a sensibility that is truly exciting.

You've noticed that the pricing on these is at a level that rarely comes in contact with the finest of the region, and yet that's exactly who we're comparing this guy to. Even if you hadn't heard of him before today, you can bet his classy wines won't stay this under-the-radar for long.

These wines, as Burghound says, "are well worth the trouble to get to know if you haven't yet tried them." Luckily, there's not so much trouble involved to do just that.
