When it comes to value in white Burgundy, Paul Pillot's Bourgogne Blanc is the first thing that we reach for.

Pillot stands as one of the most exciting and thoughtful winemakers of Burgundy’s new generation. As is often the case, it's how good the entire range is that really drives home the incredibly high level of winemaking at Pillot. The Bourgogne Blanc dazzles in ways that few other wines in the category do, and certainly not at this price point.

What makes Pillot’s wines special is their unmatched purity and crystalline character.

The 2016 Burgundy vintage saw frosts and greatly reduced yields. The resulting wines show a fascinating combination of concentration and presence with cool fruit tones, verve and crystal clear minerality.

Pillot's took the impact of the 2016 vintage and rendered wines with finely etched precision and vivid clarity. There's a firm and grippy minerality with lovely bright currents of citrus fruit. There's a really nice amount of finesse that buoys and animates the wine.

What's very clear is that everything is clicking into high gear at Pillot and the domaine is quickly moving to join the ranks of Burgundy's elite. It's rare that I come across white Burgundies this impressive at this price. I took every bottle that I could get my hands on. Still, I expect them to disappear quickly.
