Canonica's wines have become some of the hardest to find in all of Piedmont. Canonica’s Barolo Paiagallo comes from a mere 1.8 ha vineyard.

When you taste the soulful depth of Canonica's wines, you really understand why people devote so much energy to hunting them down. Their purity and their textural complexity are mind-blowing.

Canonica’s methods respect many of Piedmont's traditional practices and strive for as clear an expression of Nebbiolo as possible: minimal sulfur, foot-pressed grapes, indigenous yeasts, and aging in old oak botti. Even the labels are applied by hand. All of this results in one of the most authentic and compelling wines of Piedmont.

The 2016 Paiagallo is the total package. The aromatics pop from the glass with gorgeously delineated notes of herbs, flowers, earth, and bright red fruits. The combination of class, complexity, and unmediated purity make this very special.
