I immediately set out to find as much as possible. It wasn't easy.
Canonica's wines have become some of the hardest to find in all of Piedmont. Canonica’s Barolo Paiagallo comes from a mere 1.8ha vineyard.
When you taste the soulful depth of Canonica's wines, you really understand why people devote so much energy to hunting them down. Their purity and their textural complexity are mind-blowing.
The 2017 shows Paiagallo in prime form. The aromatics are explosive and incredibly precise. In many ways, this is the Platonic ideal of Barolo. There are notes of roses, spice, tar, and earth wrapped around a core that's both stern and finessed.
Canonica’s methods respect many of Piedmont's traditional practices and strive for as clear an expression of Nebbiolo as possible: minimal sulfur, foot-pressed grapes, indigenous yeasts, and aging in old oak botti. Even the labels are applied by hand. All of this results in one of the most authentic and compelling wines in all of Piedmont.
