These Sakes are so well known among avid Sake enthusiasts that we felt compelled to offer this extraordinary line-up.

I find the trio of Sakes on offer so captivating every time I drink them. These are impeccably crafted Sakes. Their purity and overall composition is simply stunning.

It took only one taste of a bottle of the astoundingly smooth Hokusetsu Daiginjo for Chef Nobu Matsuhisa to replace all of the Sake on the menus of his renowned restaurants with only Sake from Hokusetsu.

Founded in 1871 by the Hazu family, Hokusetsu is made on the island of Sado. The remote location is known for its harsh winters ideal for Sake, which is brewed on the coldest days of the year. The sleek dry Sake that comes out of this brewery gives true taste and meaning to Hokusetsu’s name, "Northern Snow."

There is a Japanese proverb that says, "Sake doesn’t get into fights with food." Indeed, its rich umami flavor means Sake gets along brilliantly with more than just sushi. It’s high time that Sake got its place at the table along with fine wines, and none deserve this place more than the rare offerings of Nobu.

To earn the Daiginjo distinction, the pinnacle of a Sake maker’s achievement, the Sake must be brewed from rice that has been milled down to at least 50 percent of its original volume. Nobu’s TK40 is polished down to 40 percent, resulting in a truly elegant brew. It is crafted from Koshi-Tanrei rice, a rare hybrid grown only in the Niigata district. Beautiful on the nose, TK40 is creamy, delicate, and perfectly balanced.

The designation Junmai means there is no distilled alcohol added during the Sake-making process, making this Sake at its most pure. Junmai Daiginjo is the richest of our Nobu Sakes, rustic and smooth with a profound earthiness. Brewed with rice polished down to more than half its original size, Junmai Daiginjo is crafted entirely by hand, a level of attention to detail now hard to come by, even among the finest Sake producers in Japan.

Nobu YK35 is the rarest treasure of this line-up. Made from Yamada Nishiki rice polished down to a mere 35 percent of original thickness, the YK35 is pure elegance. This ultra-refined Sake offers up silky floral notes, managing to be simultaneously delicate and boldly intense.
