Most of Cotat's holdings are on Kimmeridgian marl, the same soil as parts of Chablis. Caillottes is a different terroir. Caillottes means “little stones,” a nod to the small pieces of gravel that dominate the limestone soils. The vineyard, just east of Monts Damnes, is planted with 15-year-old vines that produce wines with a focused minerality and a punchy and lean framework.
