Few grower Champagnes have the track record for working on an elite level like Vilmart does.

They are time-tested, bulletproof Champagnes. In terms of show-stopping old bottles, the only grower who's delivered anywhere close to the number that Vilmart has is Selosse.

A handful of years ago, a bottle of '79 Vilmart was life changing. I've been stuffing my cellar with Vilmart ever since.

After tasting the '07 Coeur de Cuvée numerous times, we're convinced that it stands at the pinnacle of the vintage. Transcending the general quality of the vintage is one of Vilmart's calling cards.

If 2007 is known for a certain breadth and exuberance, the Coeur de Cuvée delivers an incredible amount of resonance and finesse. Antonio Galloni calls it "a model of elegance" and that's spot on for us.

Coeur de Cuvée is an extraordinary wine. It represents the best 800 liters from the middle of the 2,050 liter pressing—the heart of the cuvée. It's sourced from a single-vineyard, 80 percent Pinot and 20 percent Chardonnay from 55-year-old vines in the intensely chalky soils of Blanches Voies.

Over the past decade, the number of grower Champagnes has exploded with some really fascinating and compelling producers. Even as a strong cast of new entrants have joined the ranks, Vilmart remains one of the best. You don't have to look any further than the 2007 Coeur de Cuvée for evidence.
