Séchet is for purists. It’s a bottling that boasts a deep cut and a blatant expression of salinity. There’s a directness and elegance to Séchet that always impresses us.
It's simply a dazzling and full-force expression of Chablis' unique minerality. The Séchet has the classic razor's edge of textured minerality, and then the vintage kicks up the punch and presence. In 2021, Séchet is a site that shined.
Dauvissat produced an amazing cast of 2021s. Burghound has written: "I agree with Dauvissat's take on his 2021s as they are seriously good, and particularly so if classic old school Chablis is your passion."
