Last Saturday, we offered Dauvissat's Chablis AC and it sold out in a matter of hours.

Today, we're excited to offer Dauvissat's 2021 1er Cru Séchet. We should warn you from the outset that we expect a quick sell-out.

For us, Séchet is one of the unheralded bottles of Dauvissat's lineup.

Séchet is for purists. It’s a bottling that boasts a deep cut and a blatant expression of saline minerality. There’s a directness and elegance to Séchet that always impresses us.

It's simply a dazzling and full-force expression of Chablis' unique minerality. The Séchet has the wine's classic razor's edge of textured minerality and then the vintage kicks up the punch and presence. In 2021, Séchet is a site that shined. 

As we wrote last week, Dauvissat produced an amazing cast of 2021s. Burghound has written: "I agree with Dauvissat's take on his 2021s as they are seriously good, and particularly so if classic old school Chablis is your passion."

The racy and intensely citrus-suffused medium-bodied flavors exude plenty of minerality on the attractively dry, youthfully austere and linear finale.
