"I agree with Dauvissat's take on his 2021s as they are seriously good and particularly so if classic old school Chablis is your passion." -Burghound
Dauvissat's 2021s are forces of nature.
They are concentrated, tension-filled, and seriously mineral-laden. It's the sort of collection that we won't see again for many, many years.
Today, I'm happy to offer Dauvissat's 2021 Chablis 1er Cru Forest.
Along with Raveneau's Butteaux and Montée de Tonnerre, Dauvissat's Forest is one of the most sought after and ageworthy 1er Crus.
In Dauvissat's hands, Forest brims with notes of saline-inflected crushed rocks, and bright citrus fruits. It's a mesmerizing wine that ages beautifully.
The 2021 Forest is an epic edition of this wine. There's a full-throttle intensity to it. The wine is a masterpiece of sculpted purity, defined by subtlety, balance, and a keen, almost surgical precision. You’ll find notes of moss, briny sea foam, yellow-green fruit, and chalky, etched minerals.
Every time we offer Dauvissat's Forest, we're slammed by a really strong response. I don't expect this offering to be any different. Please give us your ideal order, and we'll try our best.

Burghound: "There is a hint of phenolic character on the aromas of crushed leaf, mineral reduction, lemon-lime and seaweed. The dense, succulent and powerful larger-scaled flavors are supported by a firm acid spine on the stony, youthfully austere and bitter citrus rind finale. This is quite dry and I very much like the balance though I would note that at least some patience is strongly suggested as this is quite tightly wound today."
