In 2021, Willi Schaefer produced brilliant wines in painfully small quantities.

It's particularly painful because Schaefer's collection is simply incredible. Across the range, the wines possess a laser focus and blazing mineral purity.

When it comes to the 2021 Domprobst Kabinett, the quantities were so small that the wine barely saw the light of day. It became one of the most sought-after bottles of the vintage. Schaefer's Domprobst Kabinett is always high on people's buy list and the 2021 vintage produced an incredible cast of Kabinetts. It's easy to see how the demand for the wine would go off the charts. 

Today, I'm happy to offer a modest parcel of Schaefer's 2021 Domprobst Kabinett for $44.95 per bottle. Just to underscore the rarity, this is one of two listings in the entire country. 

The 2021 Domprobst Kabinett delivers clarity, snap, and classic proportions. It has extraordinary cut and a lifted, finessed delicacy. There's an incredible persistence and precision to the wine and the lithe frame is packed with lots of nuanced complexity.

Few (if any) Rieslings reach the level of detail, grace, and fineness.  Out of Schaefer's Kabinetts, Domprobst is the most yellow-fruited and layered. It also has the most complexity and the greatest aging capabilities. The 2021 promises to age brilliantly.

It takes a while to reveal its complexity and finesse underlined by fine notes of stone fruit, lead pencil, herbs, bergamot, blackberry, cherry, violet, and lavender. The wine is still very tight on the palate but already hints at the greatness to come as there is great density and purity. The finish is still somewhat sharp yet its incredibly multi-layered side is already lurking in the background. The balance is already more off-dry than fully fruity or sweet. This is a fabulous Kabinett."
