2013 Chevillon Nuits St. Georges
1er Cru Les Cailles
I always work extra hard to find as much of Chevillon's Les Cailles as I can.
It's one of my favorite Chevillon wines. Chevillon's Les Cailles makes blatantly clear the caliber of winemaking at Chevillon and the heights that Nuits St. Georges can reach.
Compared to the richly powerful and sauvage Les Vaucrains and the grandeur of Les St. Georges, Les Cailles possesses a grace and mineral elegance. There's plenty of muscle, but you're wowed by how refined it is in the context of Nuits St. Georges.
When it comes to ageability, Les Cailles can hang with many Grand Crus. A 1989 Cailles opened at dinner a few years was lavish and coating, but with a simply thrilling finesse, energy and lift.
Over the years, we've heaped praise upon Chevillon. I won't succumb to repetition, but I'll just say that they are some of the most consistent, honest and captivating Burgundies that I know.
I'm particularly fond of the 2013 Les Cailles. The beating heart of the site is laid bare. The 2013 is so beautifully clear with punchy verve and plenty of presence and density. It sums up the vintage in the most flattering light. Burghound writes, "This should be terrific in time."
Nearly every time we open a Chevillon, the impeccable winemaking becomes more and more apparent. The 2013 Les Cailles makes this clear.
