Catching a Schaefer Kabinett in the zone is one of my favorite experiences in wine.
I have a major soft spot for Schaefer's Kabinetts. With age, they become hauntingly elegant. Every time I look at my personal cellar I find myself wishing I had more Schaefer Kabinett.
In any vintage, Schaefer's Kabinett wines thrive on an unparalleled fineness. Schaefer's Himmelreich produces Kabinetts with the most cut and salty minerality of his sites. There's something especially gripping about the agility, punch and mineral tension of a Himmelreich Kabinett.
The 2016 Himmelreich Kabinett has an amazing cut and delicacy, boasting beautiful high-toned floral notes and saline minerality. In spite of its lithe frame, the wine's finish is packed with a complex mix of herbs, crushed rock, saline notes, spice and yellow fruits. All of this is animated with an airy gracefulness.
The 2016 vintage in Germany saw a rainy first half and nearly ideal weather for the remainder. August brought warm temperatures encouraging good ripeness levels and fall allowed for long leisurely harvesting with cool nights that crystallized the wines' wonderful clarity of fruit.
Willi Schaefer's 2016 collection are some of the top examples of the pristine nature of the vintage. Of course, as they often do, the Kabinetts lead the charge. I'll wrap this up. You know the deal with Schaefer and the small size of the estate. I advise you not to wait on ordering.
