After studying oenology at Dijon, Elise Bougy took over her family's 3ha of vineyards and quickly started to turn out beautifully expressive and seamless champagnes. Bougy's holdings are split between Mesnil and Montagne de Reims.
Across the board, these are tension-filled and nuanced wines that have a rapier cut. With that said, the Chétillon de Haut really flaunts the tension and laser-like focus of her style.
This is simply a kinetic bottle of champagne that is packed with nuance. It has a chalky core with citrus and floral inflections. The purity and precision are jaw-dropping.
