The life of Dom Pérignon is amazing.

Seventeen years ago, Dom Pérignon started commercially offering recently-disgorged bottles through their iconic Oenothèque program and the world of Champagne was transformed forever. The Plénitudes program now replaces Oenothèque and offers a very explicit snapshot of Dom Pérignon's "drinking windows".

The second plénitude is intended to capture this Champagne's intense, energetic, and ultra-defined character. The just-released vintage 2000 exemplifies this stage and the wisdom of the DP's late-disgorgement release schedule. The complexity and maturity of the extended lees contact, combined with the tightly coiled mineral explosiveness makes this wine a dazzling fireworks display. The 2000 P2 possesses an enchanting elegance that is at once understated yet downright impressive.

My love affair with the DP Maison dates back to the mid-1980s when I bought my first older bottle of Dom (a 1964!) and, needless to say, I fell hard for it. That marked the beginning of a 30-year obsession. The Plénitudes have greatly deepened my understanding of one of my favorite wines in the world.
