Jean-François Ganevat allows you to witness a single winemaker crafting Vin Jaunes across different villages. Ganevat resides in the southern part of Jura in Rotalier. Through a tiny, quality obsessed négociant project, he also sources Vin Jaune from Arbois and Château Chalon. Ganevat is a spare no expense, meticulous, and naturally oriented winemaker. His Vin Jaunes are very expressive and more open examples of this fortress-like, long-aging wine.
